Zesty Taco Meat

WARNING: This is my first attempt at trying to film/edit a cooking extravaganza. It was also the first day I pulled the tripod out of the box and only the second time I used the video camera. The good news is there is a lot of room for improvement so stay tuned. I was going to trash this clip completely, but I decided to keep it so I could have something to laugh at later.

3 cups leftover meat – lean beef, chicken, pork or ground meat
1 14 oz. can of tomato sauce
2 tsp. cumin
2 tsp. chili powder
½ tsp. smoked paprika
¼ tsp. garlic powder
¼ tsp. onion powder
1/8 tsp. cinnamon
1 tsp. oregano
Salt to taste

Cook all ingredients over medium heat for about 10 minutes. Serve with high fiber tortillas, lettuce and tomatoes. Top with salsa and low-fat Greek yogurt or fat-free sour cream.

Approximate nutrition information for ½ cup shredded lean beef: 212 calories, 7.5 grams of fat and 34 grams of protein. If you want a leaner option, try chicken breast or bison.
