Kashi Tomato Bake

Try this great whole grain side dish and feel free to add more veggies.


1 cup whole grain Kashi pilaf, wild rice or brown rice, dry
1 small can of chopped mushrooms or ½ cup fresh mushrooms, sliced
1 tsp. Kosher salt
1 can diced tomatoes
1/8 tsp. garlic powder
1/8 tsp. onion powder
½ tsp. rosemary
½ tsp. thyme
2 cups broth, chicken or beef
1-2 tsp. worchestershire sauce

Mix all ingredients in a baking dish, cover and put in a preheated oven at 325˚ for two hours. If you want to decrease baking time, increase the oven temperature. I just wanted to be able to walk away for a couple hours while a roast was cooking, and return to a nearly complete meal.

Makes 4 servings – each contains approximately 200 calories, 3 grams of fiber and less than one gram of fat. It equals 3 WW Points.
