Barley Bake

If you haven't tried barley, this a super easy recipe.

I made this dish when I prepared a pork roast and baked apples. I popped them all in the oven together, left the house and came home two hours later to a feast. Barley is a wonderful grain full of fiber, which you can use in place of white rice or potatoes.

1 c. pearl barley (not the quick-cook kind)
2 ½ -3 c. chicken stock
1/8 tsp. garlic powder
1/8 tsp. onion powder
¼ tsp. rosemary
¼ – ½ tsp. salt

Add all the ingredients to a baking dish, stir and bake at 350˚F for two hours. I originally made it with only two cups of chicken stock so the barley got a little dry and crunchy in spots. I like it that way, but if you like a softer grain, the extra liquid is a good idea. A cup of barley has 3 Points on WW.

  2. I usually find barley in the health food section of a grocery store. While you’re in the the section, pick up some steel-cut oats, which is a slow cook variety of oatmeal.

    Barley also comes in a quick cook or slow cook varieties. Both are quite good.
