Freebie Vegetable Soup

This is a tasty addition to grilled cheese!

I like to have something in my arsenal that I consider “free.” I keep this vegetable soup around for just this purpose. I generally make a beef-based broth so sometimes I add a cup of meat to the stock pot, but with 12 or more cups, it doesn’t alter the nutrition content a whole lot as long as lean beef is used.

If you want to make the stock from scratch, you can find chicken, turkey or beef broth recipe on this blog – just search through the recipes, but you can also use commercially prepared broth.

12 c. broth of your choosing
2 Tbs. Worchestshire sauce
½ tsp. garlic powder
½ tsp. onion powder
½ small onion chopped
1 cup sliced carrots
1 15 oz. can of chopped tomatoes
1 stalk celery chopped
1 – 2 tsp. Thyme
¼ head of cabbage
2 cups fresh mushrooms
1-2 tsp. salt
1 tsp. oregano
1 clove garlic
1 c frozen green beans
1 zuchini or yellow squash coarsely chopped.

Throw the ingredients in a pot and cook for about 15 minutes – yum! If you want to spice it up a bit, add some Tabasco or cayenne pepper to taste. If you want to add some protein, black beans or garbanzo beans work well.

This is a great filling soup to accompany a sandwich like grilled cheese. I don’t eat grilled cheese sandwiches often because they are pretty steep in Points/calories, but this soup helps make the meal a little friendlier.
