Citrus Inspired Eggplant

Eat Your Veggies

Who would have ever guessed that I would like eggplant, but I really enjoy it. You can serve this dish warm or chilled, as a side dish or a little dippy appetizer with low fat-crackers or other veggies. Either way it’s packed with flavor and fiber with very few calories.

1 large eggplant
1 tbs. extra virgin olive oil
1 clove minced garlic
Juice of 2 lemons
Salt and pepper to taste
1 Hot pepper or ¼ c. bell peppers chopped (optional)

Roast the eggplant in the oven on 375˚F or on the grill for 40 minutes. The grill works nicely because it adds a little smoky flavor. Peel eggplant and chop/mince into tiny pieces. You can also just smoosh it with a fork if it’s very soft. Add other ingredients and enjoy.

As a side dish, I liked it cubed like it is in the picture, as a dip, I like to roast it just a few minutes longer so it is softer and will mash easier with a fork.

Nutritional Information: 4 servings – approximately one cup each. Each serving contains approximately 57 calories, 3 grams of fat, 3.6 grams of fiber and 1 gram of protein. One point on WW.
