Pineapple Chicken Salad

I love to add fruit to chicken salad. You can also kick it up a notch by increasing the spices. I wanted to go easy the first time around to make sure I liked the combination of spices, but I think you could easily double the ginger and dill.

12.5 oz. can of white meat chicken
¼ c. fat free mayonnaise
½ c. chopped pineapple
¼ c. chopped carrots
¼. c. chopped cucumber
1/16 tsp. cinnamon
1/16 tsp. ground ginger
1/16 tsp. garlic powder
½ tsp. fresh dill
2 tsp. Dijon mustard

Mix all the ingredients and serve. I like using the Arnold’s Sandwich Thins. It makes four half-cup servings. Each serving has approximately 150 calories and about 25 grams of protein. Weight Watchers Points – 3.

  1. Where can you buy fat free mayo in the Columbus area? I can’t find it.

  2. FF mayo is getting difficult to find in grocery stores. I think I found it in Meijer or Kroger. For recipes like this, it works well, but you can also use “light.” If you don’t want the extra calories, decrease the amount of light mayo. You might also try asking the store manager where you shop. I’ve had a lot of luck with special requests. When I do find it, I usually get a couple jars. I swear I could buy it all, and sell it on eBay! Good luck! I’ve also made the chicken salad with lowfat Greek yogurt. That keeps fat content down, and it is creamy.
