Black Bean Dip

Feast on this low-fat high fiber treat!

I love to be able to take something healthy to a party that other people besides me will actually enjoy. Give this dip a shot. The only nutrition information to consider is the calories, fiber and protein in the beans and any chips you may choose to eat with it. Opt for the baked tortilla chips and save yourself some calories!

3 cans of black beans
2 cloves garlic
1 tsp chili powder
1 tsp cumin
¼ tsp cayenne pepper
3 Tbs fresh cilantro
½ tsp ground coriander
¼ tsp jalepeño pepper (You can use a fresh jalepeño pepper, I didn’t have any so I just used the powdered herb. If you don’t have either one, use more cayenne)
1 tsp smoked paprika
¼ cup chopped green onions
½ tsp salt
1 small tomato chopped,
½ tsp lemon pepper (or juice of one lemon)

Puree two cans of beans and add all spices. Drain and rinse one can of beans and add to the pureed mixture. Stir in all the remaining ingredients, garnish with extra cilantro and serve with tortilla chips. Enjoy!
