Taco Soup

If you can open a can, you can make this!

2 cans sweet corn, drained
1 can diced tomatoes
1 jar chunky salsa
2 cans fat free refried beans
2 cans black beans, rinsed and drained
2 cooked chicken breasts or 1 can of cooked chicken
1 box fat free chicken broth
1-2 tsp. chili powder
½ – 1 tsp. cumin
Fresh cilantro, green onions, fat free sour cream for garnish

Open all the cans and throw them into a large pot. Add spices. Add chicken broth until you get the consistency of soup you desire. Some people like a thinner soup so add more broth. If you like a chowder consistency, add less. Stir until bubbly. For those WW members, a cup is about 2 Points®. Garnish with cilantro, green onions and fat-free sour cream. It also goes great with tortilla chips. I love Baked Lays!

This is another super easy recipe. I throw it in a crock pot and take it to fall and winter parties. It gives me something healthy to eat that everyone else also likes. Taco seasoning can be substituted for the chili powder and cumin if so desired. I like to use the individual spices because I avoid all the preservatives. If you are going to use the packaged taco seasoning, go easy until you get the desired taste.
